Summer picnic – Italian style

Let’s be honest, food and wine truly taste better when the sun is shining down on us. It is one of the many benefits of dining al fresco. When we think of outdoor entertaining we think of pool parties or barbeques, but why not throw a pizza picnic? Pizza is universally loved, easy to prepare and it is the perfect spread to highlight fresh and flavorful produce.

Nothing beats a thin-crust Italian pizza. Homemade dough, rich tomato sauce, delicate mozzarella topped with aromatic basil leaves; these ingredients are simple, healthy, and OH-SO-Summery.  Everything about this menu channels Italy. All you need is fresh ingredients and the recipe for the best pizza you will ever make (see below).

  • 3  ½ cups flour
  • 1 teaspoon sugar
  • 2 ¼ tablespoons yeast
  • 2 teaspoons kosher salt
  • 1 ½  cups warm water
  • 2 tablespoons olive oil


Mix the sugar and yeast into a large measuring cup filled with warm water. Let this mixture sit for a few minutes, or until its risen double in size. Combine the flour, salt, and yeast mixture into a bowl and begin mixing on medium (using the hook attachment). While the mixer is running, add 2 tablespoons olive oil and beat until the dough forms to the hook. Place dough into olive oiled bowl, cover with plastic and let rise in a warm spot for 1.5 – 2 hours.



Split dough into two balls (giving you two pizza crusts) and start stretching onto an olive oiled pan. You can also sprinkle cornmeal onto the pan before the dough to give it a nice crisp. Use a fork to poke a few holes in the dough and cook in the oven at 400 degrees F for approx 5 minutes or until golden brown. Spread on the tomato sauce and mozzarella, season with salt and pepper and place into the oven for another 5 minutes or until cheese is melted. Garnish with basil and your homemade pizza is complete.
