Oh how we love when our sister comes home from traveling the world, or living in sunny Los Angeles, and shares her love for food with us. A classical violinist and a foodie at heart, she has honed her craft by spending summers in Italy and France learning from some of the best. We are so excited to be featuring Brita in this kitchen series, focusing on one of her many specialties, croissants.

The story behind this recipe:
Spending some time in France this summer, I was constantly being lured in to the boulangeries as I was walking along the street. This was purely based on the warm and yeasty aromas of all the incredible baking coming from inside. Croissants are a staple in French bakeries and there are so many different kinds to choose from! Pain au chocolat, cheese, almond, or plain butter are some of my favorites in France. The best croissant I had this summer was in Carcassonne — a medieval city in the Languedoc region of southern France. It was at a cute little place called Boulangerie Noez and I’ll never forget the lightness, texture and flavour in this perfect little pastry.

When I went to visit friends at a vineyard nearby, most mornings would be spent indulging in warm croissants from the local baker. Let’s just say I had an extremely difficult time leaving France… Traveling to Italy after, I tasted the croissants there (known as a cornetto), and I found they were quite different. They are slightly more bread-like, softer, less flaky, and popular ones include those filled with cream or apricot jam.

What/who inspires you when you cook?
Travel has definitely inspired my passion for cooking. I love learning from everyone I meet how they make different dishes, and it’s so interesting to see how ingredients and recipes change depending on where you go.
