Watch out, pumpkin! Sweet potato pie is here. We never would have guessed this pie could surpass the excellence of pumpkin, but it just might have. While a little more labour than pumpkin (yes, you actually have to boil/peel/mash the sweet potatoes), we promise – it’s worth it. We’re not sure if it was the unbelievable aroma this pie filled our house with, but it seemed to take forever to bake, perhaps over an hour. Be patient and know the pie is only done when a toothpick comes out clean, not a minute before! Impress your family with this pie over the holidays – you won’t regret it.

Sweet Potato Pie

Ingredients

  • 2 eggs
  • 1 ½ cups cooked & mashed sweet potatoes
  • ¾ cup brown sugar
  • 2 tbs butter
  • ¾ tsp cinnamon
  • ¾ tsp ginger
  • ¼ tsp all spice
  • ½ tsp salt
  • 1 tsp vanilla

Directions

Mix and put in an unbaked pie shell. Bake at 350° until toothpick comes out clean. Cool and top with whipped cream.
