Eating seasonally – through pie: Strawberry rhubarb

We are a third of the way through the year, which means a third of the way done the blondewalk pie challenge. With May among us, we are taking advantage of the garden-fresh rhubarb arriving at the farmer’s market. Rhubarb is theoretically a vegetable, but when combined with sweet strawberries, it resembles a tart fruit.

With many blondewalk gatherings approaching, we decided to make mini pies as well. This bright and flavourful dessert is the perfect way to end an evening meal outside or to enjoy midafternoon with a cup of coffee. We have provided our strawberry rhubarb pie filling recipe below.

STRAWBERRY RHUBARB PIE FILLING

Ingredients

  • 2 cups strawberries
  • 2 cups rhubarb
  • 1 cup sugar
  • 1 tsp cinnamon
  • 3-4 tbsp flour

Directions

Bake for 15 minutes at 400°F and then down to 350°F for 30 minutes.
