Eating seasonally – through pie: Chess

Similar to pecan, chess pie is a southern specialty that we were thrilled to experiment with this month! Having never made a chess pie before, we were up for the challenge. Recipes vary, but the basic filling often contains eggs, sugar, butter and vinegar (which cuts the sweetness). We decided to bake the standard pie using this recipe, however flavourings such as vanilla, lemon or chocolate could also be added.

We enjoyed the pie with our extended pie-loving family and were shocked to learn that not one of us had tried nor heard of chess pie before. Prior to serving, each piece was topped with freshly whipped cream. Flavours similarly found in pecan pie or crème brulee were at the forefront of this southern staple. Unanimously loved, it will certainly be made again in our kitchen.
