The sweet and distinct flavour of apricots makes this pie ideal for the summer months. We opted for a coconut crumble topping to compliment the tartness of the fruit. What a perfect, yet unexpected pairing. We decided upon this foolproof recipe by Martha Stewart. Although the juices from the apricots leave this pie very moist, we recommend serving with whipped cream or ice cream. Also, don’t skimp on the coconut crumble on top – this is equally as important as the apricots.

Another reason we love this pie challenge – we wouldn’t normally try apricot pie! But it was so tasty and succulent; we will definitely be making it again this summer.
